"No Bake" Pumpkin Cheesecake Mousse Parfait

This is one of my recipes that uses Chocolate Walnut What!? Posh Nosh.  This one is rich, delicious and just downright amazing!


-Pumpkin Cheesecake Mousse:

  • 1 8oz package of cream cheese (room temp)
  • 1 cup to 1.5 cups of pumpkin puree
  • ½ cup coconut palm sugar
  • 1 tsp vanilla
  • ¼ tsp sea salt
  • ¼ tsp cinnamon
  • ¼ tsp nutmeg

-1 box of Chocolate Walnut What!? Posh Nosh

Use an electric hand held or stand up mixer.  Mix cream cheese on medium high for about 3 minutes until smooth and creamy.  Turn mixer on low and add in the sugar.  Once fully incorporated, change speed to medium and add in the pumpkin puree, vanilla, salt and spices. 

Chill for about 1 hour. While the cheese cake filling is chilling, set out one medium trifle bowl or about 6 individual wine glasses. Start with a layer of Chocolate Walnut Posh Nosh and then add a layer of mousse and then repeat.This smooth and crunchy combination is the perfect dessert treat!
