Low Carb Hot Cereal

Hot cereal is something that I have missed greatly being on a low-carb and low-sugar regimen.  My body also can't tolerate oats, event gluten free oats, so I had to find another way to satisfy this hot cereal craving of mine.

This version is low carb, rich in superfoods and super satisfying.


  • 2 Tablespoons chia seeds
  • 2 Tablespoons ground flax seed
  • 1 Tablespoon nut butter (I prefer almond or peanut butter)
  • 1/2 teaspoon cinnamon
  • pinch of sea salt
  • Optional add-ins: coconut flakes, raisins, chocolate chips

In a small cereal bowl, combine 2 TBSP of chia seeds, 2 TBSP of ground flax seeds, 1/2 tsp of cinnamon and a pinch of salt.  Stir in 1/2 cup of boiling water and stir to mix for about 30 seconds.  Then add 1 TBSP of nut butter (sunflower seed butter, if you are looking for a #nutfree version).  The boiling water will soften the chia seeds and make everything mix together pretty easily.  Feel free to add more water if it becomes too thick, or less, if you want it thick.  Once fully mixed, I then add a few more things such as a 1/2 TBSP of coconut flakes and a few chocolate chips.  You can also add some raisins and some brown sugar should you be going for that true oatmeal feel.  I eat this at least once a week in the morning and it makes me so happy!
