When I am craving a fudgy browning that is low in sugar, this is my go to recipe.
- 1 stick salted butter (8 TBSPs)
- 1 cup dark chocolate chips
- 3 eggs (room temperature)
- 1/2 cup coconut palm sugar
- 1/4 cup cocoa powder
- 1/2 tsp vanilla
Pre-heat your oven to 350 degrees.
In a medium microwave safe bowl, melt together butter and chocolate chips. Heat for 1.5-2 minutes, pausing and stirring every 30 seconds, so that it doesn't burn. Stir to make sure it is well combined, smooth and fully melted.
Whisk in coconut palm sugar and eggs (whisking in one at a time). Then whisk in cocoa powder then vanilla.
Scape batter into a parchment paper lined 8x8 brownie pan. The batter will be very thick, so you will need to spread it to cover the bottom of the pan.
Bake for 25 minutes. Let cool for about 30 minutes after you remove from the oven.
*By now, you should know that I love to store everything in the freezer, especially these fudge brownies. They test extra rich when you take them out of the freezer and let heat up for a few minutes.
