I woke up craving carbs but I knew that wouldn’t be good, especially today, when I need my energy to last a long time. So.... I made some pancakes.
What?!?! These pancakes are NOT loaded with carbs, but high protein ingredients like coconut flour, eggs, and more. They are fluffy, satisfying and delicious.
Here is the recipe:
- 2 Tablespoons of melted butter or melted coconut oil
- 3 eggs
- 1 tsp vanilla
- 1/4 cup coconut flour
- 1/2 tsp baking soda
- 1/4 tsp sea salt
- 1/4 tsp baking powder
- 1/3 cup coconut milk (I used full fat)
- 2 Tablespoons honey (I omitted the honey because I added chocolate chips to add some sweetness)
- handful of chocolate chips or blueberries
Whisk everything (except chocolate chips or blueberries) together and ladle on a medium heat griddle coated with melted butter, coconut oil or non stick spray. sprinkle into the batter when on the griddle. Cook for a few minutes on each side until batter begins to bubble. Enjoy!
