Today is a chia pudding type of day. Top it with some sweet nuts and it is the perfect mid afternoon treat.
- 1 cup full fat coconut milk
- 1/4 cup chia seeds
- 3 Tablespoons cocoa powder
- 2 Tablespoons nut butter (for nut free, use sunflower seed butter)
- 1-2 Tablespoons maple syrup
- 1 tsp vanilla
In a medium bowl, whisk together, coconut milk, chia seeds, cocoa powder, nut butter, maple syrup and vanilla. Mix together well and pour into 3-4 small bowls or ramekins. Place in the fridge for at least 2 hours. Before eating, top with some Posh Nosh and enjoy!
