Brownie Recipe #2

Staying in on a Saturday night??  Make some brownies!

Ingredients:

  • 6 Tablespoons coconut oil
  • 1 heaping cup dark chocolate chips
  • 2 eggs (room temperature)
  • 2/3 cup coconut palm sugar
  • 2 tsp vanilla
  • 1/4 cup cocoa powder
  • 3 Tablespoons arrowroot powder
  • 1/4 tsp sea salt

Preheat oven to 350 degrees.

In a small saucepan, melt together (over low heat) coconut oil and dark chocolate chips. Once melted, set aside to cool for a few minutes.

While the chocolate mixture is cooling, in a large bowl with an electric hand mixer, beat together eggs, coconut palm sugar and vanilla.  Slowly add in the melted chocolate mixture.  Once fully combined, add cocoa powder, arrowroot powder and sea salt.  Mix fully.  Batter will be thick.

Line an 8x8 pan with parchment paper and scrape batter into prepared pan.  The batter will be thick and sticky, so you might need a spatula or metal spoon to spread evenly in pan.   

Bake for 25 minutes.  Let cool for about 15-30 minutes.  I actually popped the pan in the freezer for a few minutes after it cooled on the counter, so I could cut more precise squares.  Store in an air tight container or bag in the freezer.  

These are rich, so eat with caution.... :)
